BEFORE OPENING Che Fico in San Francisco earlier this year, chef David Nayfeld did some soul searching. He’d spent his early career cooking at such temples of haute cuisine as Eleven Madison Park in Manhattan and Joël Robuchon at the MGM Grand in Las Vegas. “But that wasn’t the food I wanted to eat,” he said.
