Ingredients:
800 gr of monkfish
16 clams
1/2 onion
2 cloves of garlic
1/2 l of fish stock
1/4 l of white wine
1 bunch of parsley
Flour
Instructions:
Cut two slices of monkfish about 2 cm thick. Flour them.
Chop an onion and poach in olive oil over medium heat.
Chop the garlic cloves and add to the oil.
Once golden onion and garlic add the flour rapeseed. Move the casserole so that the monkfish releases the gelatin. The monkfish is turned over and the clams are added. We move the casserole again and add 2 tablespoons of flour and integrate it. Quickly add half a glass of white wine and add a white fish fumet (important that it be white fish so it does not darken the sauce). Add a handful of chopped parsley and let cook 7 or 8 minutes. We serve
As a side dish you can put cooked potatoes.
